The angle between the plates remains constant (35˚) during movement, and the knife’s pads converge into a perfect V-shape. This makes it easy to cut the most demanding foods, such as tomatoes, soft breads and vegetables with ease, while you enjoy the pleasure of cooking.

To maximize sharpness, we’ve added a second slot of soft grit plates to the Aprisa Gentle. With your purchase you get two sets of diamond plates: for slot 1 (320 grit – 2pcs) and for slot 2 (600 grit – 2pcs). Additionally you can buy a set of finishing plates (1200 grit – 2pcs) for installation in slot 2 after grinding on standard plates.

We recommend using Aprisa Gentle only for straightening the knife, for initial sharpening use the special Aprisa Fast device with carbide plates. This will save you a lot of time on rough deburring operations when sharpening your knife on the Aprisa Fast, while dressing on the Aprisa Gentle will increase the service life of its inserts.

When the plates wear out, replace them with new ones, it’s easy, they are removed and fitted by hand, instructions are included with the unit. Buy replacement plates on marketplaces or from the manufacturer’s website with fast shipping.
